Raspberry & White Chocolate Waffles

I wanted to show you in this post how versatile my waffle recipe is.

My waffle recipe is one of those basic recipes that you can change to create whatever flavour / combination you like. Given it’s cool in Sydney, my kids, if we are home, love a sweet treat of raspberry and white chocolate waffles. This was their flavour combination that they come up with. I completely understand where they are coming from, I used to love everything raspberry and white chocolate.

To make them dairy free you simply need to substitute the white chocolate bits for dairy free ones or even a chopped up block of dairy free white chocolate like the Sweet William White Delight Block which we buy from our local supermarket. Then substitute the milk for your favourite non-dairy milk.

If you don’t own a waffle machine then you can easily cook the mix as pancakes. You may need to add a little more milk to get it to that pancake consistency so that they cook right through otherwise they will be thick pancakes and need a little extra time to cook all the way through.

The number of waffles this recipe will make will depend on the size of your waffle maker. With the Cuisinart I cook them on setting number 4, and using a ½ cup of batter for each waffle it makes 7 large waffles.

  • 1½ cups gluten free flour (sifted)*
  • 1 Tablespoon sugar**
  • ½ teaspoon vanilla powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 eggs
  • 300ml milk (dairy or non-dairy)***
  • 100g white chocolate bits (or chopped non-dairy white chocolate)
  • 125g frozen raspberries


  1. In a large mixing bowl whisk together flour, add sugar, vanilla powder, baking powder and baking soda.
  2. In a large measuring jug mix milk and eggs together.
  3. Whisk milk mixture into flour mixture til smooth.
  4. Stir through white chocolate and frozen raspberries.
  5. Pour quantity required for your waffle maker and cook for the required time.
