Strawberry & Lemon Chia Pudding

Chia puddings are a great alternative for breakfasts and snacks whether you are at home or on the go. You can top them with any type of yogurt (I love using coconut yogurt either Born Cultured or my own homemade yogurt) and/or any type of fruit. I love that you really don’t need that much, and it keeps you full for a while too.

I like setting them overnight on the kitchen bench, but of course you can also put them in the fridge to set. I find the fridge makes them go a little thick for my tastes, but if you like a thick chia pudding then set it overnight in the fridge. The recipe is versatile, as if you also like chunks of strawberries then only blend til you get to the chunky consistency you like. You can also skip blending the strawberries altogether if you like chunks of strawberries. Other than the blending you only need a jar (I prefer glass) with a lid on it to prepare this recipe…too easy.

Like many of my recipes I have lots of different flavour combinations, so I will share with you my absolute favourite first. I do love the flavour combination of strawberry and lemon! Just to give it a twist I love using lemon essential oil. Trust me it’s totally worth it! Of course, you can put in some lemon zest as a substitute for the lemon essential oil in this recipe.

Remember, I use dōTERRA essential oils. The lemon essential oil can be ingested. Do not buy a lemon essential oil from the shops and use it, as it may actually be harmful to ingest.   1. Put defrosted strawberries and water into a blender and mix til combined and smooth (or to the consistency you like).
  2. Pour strawberry/water liquid into a jar with a lid.
  3. Add chia seeds and shake til combined.
  4. Leave overnight to set.
