Strawberry & Lemon Chia Pudding

Chia puddings are a great alternative for breakfasts and snacks.  Whether you are at home or on the go.

You can top them with any type of yogurt.  I love using coconut yogurt and fruit. I love that you really don’t need to eat that much.

I prefer setting chia puddings overnight on the kitchen bench, but of course you can also put them in the fridge to set. I find the fridge makes them go a little thick for my tastes, but if you like a thick chia pudding then set it overnight in the fridge. The recipe is versatile

  • If you like chunks of strawberries then only blend til you get to the chunky consistency you like.
  • Skip blending the strawberries altogether if you like chunks of strawberries.

If you don’t want to blend it then you only need a jar (I prefer glass) with a lid on it to prepare this recipe.  It’s that simple!

I have lots of different flavour combinations, so I will share with you my absolute favourite first.

I do love the flavour combination of strawberry and lemon. I find that lemon with strawberry just gives it a twist. I especially love using pure lemon essential oil. Trust me it’s totally worth it! Of course, you can put in some lemon zest as a substitute for the lemon essential oil in this recipe.

Remember, I use dōTERRA essential oils. The lemon essential oil can be ingested. Do not buy a lemon essential oil from the shops and use it, as it may actually be harmful to ingest.   1. Put defrosted strawberries and water into a blender and mix til combined and smooth (or to the consistency you like).
  2. Pour strawberry/water liquid into a jar with a lid.
  3. Add chia seeds and shake til combined.
  4. Leave overnight to set.
