Fried veggies (vegetables) are a must in our house. I find them so easy to make. They are great for breakfast, lunch or dinner. For breakfast I like them with a fry up of fried eggs, gf bacon, gf sausages and mushrooms for my family.
For lunch they are great mixed with a tin of tuna, or with a poached egg. For dinner they are super delicious with a steak instead of sauce or gravy. Sometimes for an easy dinner I have fried veggies with a poached egg.
Depending on what I have in the fridge will depend on what goes into the fried veggies. It’s a great dish to make when you want to use up vegetables that have been sitting in the fridge…better than wasting them. I do have my favourite vegetables that I like to use, so here’s my recipe.
I tend to make plenty and eat the leftovers for lunches for the next few days.

- 4 fresh tomatoes, diced
- 1 red capsicum, diced
- 1 zucchini, chopped
- 10 kale leaves, chopped (I like to use Tuscan kale)
- ¾ cup water
- Sprinkle of himalayan sea salt and pepper
- Chopped all vegetables
- Add chopped vegetables with water, salt and pepper to a fry pan or sauce pan (no lid).
- Cook til boiling then reduce to a simmer for approximately 20 mins or until thoroughly cooked.
