Want A Date? Paste? Date Paste
This week’s post is an easy raw recipe. Date Paste. You can buy date paste, but it’s really easy to make particularly if your like me and always have dates in the fridge. I love eating them if I feel like a sweet treat.
Dates are not only sweet they also have lots of nutritional benefits as well.
I buy medjool dates and preferably organic. They are usually available in the fridge section of the supermarket or green grocer, or, at your local farmers market or bulk foods store. When I’m planning on making lots of sweets with dates, I do usually buy a big box of medjool dates, as they are cheaper in a larger quantity, but you won’t need a big box for this recipe just 200g which if your buying them from a supermarket its a small punnet of dates.
So why date paste I hear you ask? Here are some ways I use it.
As a replacement in recipes for sugar if your trying to cut down on sugar (you may need more flour though to soak up the liquid).
In smoothies to sweeten them rather than use rice malt syrup, honey, maple syrup or some other sweetener.
As a natural caramel sauce for icings, cakes, slices, ice cream, smoothie bowls, yogurt, etc.
In gluten free sticky date pudding.
Or, you can use it on your toast or just to eat it a spoonful at a time.
You will need a mixing bowl or a container for soaking, and a either a food processor or blender for this recipe. You will also need a 500ml sterilised jar. This recipe makes approximately 440ml (depending on the extra water you add, if any).
The recipe is for a ‘thinner’ consistency paste, as this is how I like to use it. I used a blender for this recipe. However, if you prefer a ‘thicker’ type paste then soak the dates and blend with a food processor adding a teaspoon of water at a time til you get the right consistency.

- 200g Medjool Dates
- 200g Hot Water
- 3 Tablespoons Water (just in case for blended)
- Remove the pits from the dates.
- Place dates in a mixing bowl large enough for the dates and water.
- Add the hot water to the dates.
- Leave to soak for 3 hours. This will soften the dates so that they blend easier.
- Pour in the soaked dates (and water) into a blender and blend til smooth. You may need to add a little more water to help it blend, but not too much, as you don’t want it too runny.
- Pour into a clean / sterilised jar.
- Keep refridgerated for 1-2 weeks.
After I’ve blended the paste I scrap out as much as possible out of my blender then make a nut or coconut milk smoothie with the excess just so I don’t waste a drop.
You can also make date paste in advance then freeze it in ice cube trays. When they are frozen take them out and store them in the freezer in a container, freezer bag or ziplock bag for 3 months.
